Simple CBD Pumpkin Chocolate Chip Cookie Recipe

Ingredients
- 2¼ cups Flour
- 1 cup Pumpkin Puree
- 1 cup Semisweet Chocolate Chips
- 1 Egg
- ⅓ cup Sugar
- 2 tsp Baking Powder
- ½ tsp Salt
- ½ cup Cocoa Powder
- ½ tsp Ground Nutmeg
Dairy
- ½ cup Unsalted Butter diced into cubes
CBD
- 4 ml Simply Add CBD™ Baking Oil ≈ 6 mg CBD per cookie
Instructions
- Preheat your oven to 350° F or 180° C.
- In a large mixing beat the butter with the granulated sugar with a help of a hand mixer until creamy and fluffy.
- Add the egg and vanilla extract and beat until all well incorporated.
- Add the pumpkin puree and the Simply Add CBD™ Baking Oil by dispensing it out of the dropper a little at a time all over the mixture to disperse the CBD and mix thoroughly.Important: Mix thoroughly at this step for a few extra minutes to ensure the Simply Add CBD™ Baking Oil is dispersed throughout the mixture. This will ensure each CBD pumpkin chocolate chip cookie has a more even dosage of CBD.
- Once the CBD and pumpkin puree are mixed in, add in the dry ingredients: flour, cocoa powder, baking powder and salt. Beat again with the hand mixer until thoroughly combined into the mixture.
- Using the spatula, stir in the chocolate chips.
- Line your cookie sheet with parchment paper. Then, scoop out balls batter and place them on the cookie sheet lined with parchment paper using the cookie or ice-cream scooper, or a spoon if you don't have a scooper handy.
- Bake them in the pre-heated oven for about 15 minutes.
- Remove them from the oven and let them cool slightly.
