For the Crust

  • 1 cup Almond Flour
  • 1 cup Cassava Flour
  • ¼ cup Butter softened
  • 1 Egg
  • 1 pinch Salt
  • 2 tbsp Coconut Sugar

For the Pie Filling

Instructions

The Crust

  • Preheat oven to 350° F or 190° C.
  • In a large bowl add the almond flour, cassava flour, salt, coconut sugar, egg, & butter.
  • Mix until well combined.
  • Split the dough into 1/3 & 2/3. Form the 2/3 of the dough into the pie pan.
  • Let the dough chill while you make the filling.
  • In a medium bowl mix the blueberries, maple syrup, almond flour, & Simply Add CBD™ Baking Oil.
    Important: Mix thoroughly at this step for a few extra minutes to ensure the Simply Add CBD™ Baking Oil is dispersed throughout the mixture. This will ensure each slice of CBD paleo blueberry pie has an even dosage of CBD.
  • Transfer the mixture into the pie pan and roll out the 1/3 of the dough on to a clean flour dusted countertop to make the lattice top.
  • Lattice tops are very important when making fruit pies. In the oven, the pie filling will start to bubble if the steam from the filling doesn't have anywhere to escape. And if it has too much room to escape, the filling will burn. Having these small areas for the steam to escape helps bake the pie right!
  • Cut 1" strips of the dough with a pizza cutter. Then, weave the strips together on top of the pie by going up and over.
  • Chill the whole pie in the freezer for 20 minutes.
  • Bake the pie in the preheated oven for 45 - 55 minutes or until it's golden brown.
  • Let it chill almost completely before serving.
