For the Crust

  • 2 cups Fine Graham Cracker Crumbs
  • 3 tbsp Sugar
  • 8 tbsp Butter melted
  • 1 pinch Salt
  • 1 tsp Vanilla Extract

For the Pie Filling

  • 2 cups Heavy Whipping Cream
  • 5 oz Mascarpone Cheese
  • ½ cup Lime Juice
  • 1 Zest of Lime
  • 1 tsp Vanilla Extract
  • 2 tbsp Sour Cream
  • ½ cup Powdered Sugar
  • 1 pack Gelatin dissolved
  • 4 ml Simply Add CBD™ Baking Oil ≈ 12.5 mg CBD per Slice of Pie

For the Topping Decoration

  • 1 cup Heavy Whipping Cream
  • 1 Zest of Lime
  • 3 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

The Crust

  • In a bowl add the ground graham crackers, sugar, salt, vanilla extract and melted butter.
  • Mix everything together until combined and transfer the mixture into a pie pan.
  • Distribute the mixture to form the pie shell all around the pie pan, making sure the edges are covered, too.
  • Set the crust filled pan into the freezer until you prepare the pie filling.

CBD Gingerbread Cream Pie Filling

  • In a bowl add the heavy whipping cream and powdered sugar.
  • Add the vanilla extract and start whipping it into stiff peaks.
  • Then, add the mascarpone cheese, sour cream, lime juice, zest of lime, dissolved gelatin, and the Simply Add CBD™ Baking Oil. Stir until combined and fully incorporated.
    Important: Mix thoroughly at this step for a few extra minutes to ensure the Simply Add CBD™ Baking Oil is dispersed throughout the mixture. This will ensure each slice of CBD key lime pie has an even dosage of CBD.
  • Transfer the filling into the chilled pie crust.
  • Smooth it out with a help of a spatula and let it set in fridge for about 2-3 hours.

For the Topping Decoration

  • Whip the heavy whipping cream with powdered sugar and vanilla extract into soft peaks. Then, place the whipped cream on top of the pie.
  • Pipe out a dollop of eggnog whipped cream on each slice, or around the rim of the pie at the pie crust.
  • Top it off with sprinkling some extra zest of lime on top of the pie.

Notes

For clean cuts, let the pie chill and set in the fridge overnight!
