How to Make CBD Kentucky Derby Pie

Step 1:

In a large bowl, add the flour, salt, sugar, vanilla extract, and diced butter. Rub the cold butter into the flour mixture, until sandy consistency forms. Add the icy water and start forming a bowl. Let the dough chill in the refrigerator for about 20 minutes.

Step 2: 

On a flour dusted countertop, roll out the dough into 1/2″ thickness and place in the pie pan.

Step 3: 

In another bowl, mix the light brown sugar, honey, eggs, melted butter, bourbon, flour, vanilla extract, & Simply Add CBD™ Baking Oil.

Step 4:

Stir in the chopped walnuts and chocolate chips. Pour this pie filling on top of the pie crust.

Step 5:

For the Crust

  • 1¼ cups Flour
  • ½ tsp Salt
  • 1 tsp Vanilla Extract
  • 2 tbsp Sugar
  • ½ cup Butter cold & diced
  • 3 tbsp Ice Water

For the Pie Filling

  • ¾ cup Light Brown Sugar
  • ¾ cup Honey
  • 5 Eggs
  • ½ cup Flour
  • ½ cup Butter melted
  • 3 tbsp Bourbon
  • 2 tsp Vanilla Extract
  • 1 cup Chocolate Chips
  • ¾ cup Walnuts chopped
  • 4 ml Simply Add CBD™ Baking Oil ≈ 12.5 mg CBD per Slice of Pie

For Topping

  • ½ cup Heavy Whipping Cream
  • 3 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

  • Preheat oven to 350°F / 190°C.
  • In a large bowl, add the flour, salt, sugar, vanilla extract, and diced butter. Rub the cold butter into the flour mixture, until sandy consistency forms. Add the icy water and start forming a bowl. Let the dough chill in the refrigerator for about 20 minutes.
  • On a flour dusted countertop, roll out the dough into 1/2" thickness and place in the pie pan.
  • In another bowl, mix the light brown sugar, honey, eggs, melted butter, bourbon, flour, vanilla extract, & Simply Add CBD™ Baking Oil.
    Important: Mix thoroughly at this step for a few extra minutes to ensure the Simply Add CBD™ Baking Oil is dispersed throughout the mixture. This will ensure each slice of CBD pie has a more even dosage of CBD.
  • Stir in the chopped walnuts and chocolate chips. Pour this pie filling on top of the pie crust.
  • Bake the pie in the oven for about 45 - 55 minutes or when it does not jiggle when you shake it. Let it cool completely.
  • Whip up the heavy whipping cream with powdered sugar and vanilla extract until soft peaks form and dollop each slice with this topping.
