Simple CBD Gingerbread Cream Pie Recipe

This CBD gingerbread cream pie recipe makes 8 servings of pie infused with CBD containing about 12.5 mg of CBD per serving using Simply Add CBD™ Baking Oil.

Equipment

Ingredients

For the Crust

  • cups Flour
  • 2 tbsp Sugar
  • ½ cup Butter diced
  • 2 tbsp Cold Water
  • ½ tsp Salt
  • 1 tsp Vanilla Extract

For the Pie Filling

  • 2 cups Heavy Whipping Cream
  • ½ cup Powdered Sugar
  • 3 tbsp Molases
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • ½ tsp Ground Cloves
  • ½ tsp Ground Nutmeg
  • ½ tsp Ground Ginger
  • 1 pack Gelatin disolved
  • 3 oz White Chocolate melted
  • 4 ml Simply Add CBD™ Baking Oil ≈ 12.5 mg CBD per Slice of Pie

For the Topping Decoration

  • 1 cup Heavy Whipping Cream
  • 3 tbsp Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1 pinch Ground Nutmeg

Instructions

The Crust

  • In a large bowl, add the flour, salt, sugar, vanilla extract, egg yolk and diced butter.
  • Beat the cold butter into the flour mixture using a hand mixer, until sandy consistency forms.
  • Add the cold water into the mixture and mix to start forming the dough.
  • Let the dough chill in your fridge for about 20 minutes.
  • Let the dough chill while you make the filling.
  • Begin preheating your oven to 400° F or 190° C.
  • On a flour dusted working surface, roll out the dough into ½ inch thickness. Then place it in a pie pan, forming it to the pan. Poke the pie shell in various places using a fork and place it in the freezer for 15 minutes.
  • Bake the pie in the pre-heated oven for about 15 minutes or until golden brown, then set it aside to let it cool completely.

CBD Gingerbread Cream Pie Filling

  • In a bowl whip up the heavy whipping cream alongside with the powdered sugar, vanilla extract, ground cinnamon, ground nutmeg, ground ginger and ground cloves. Mix until creamy and soft peaks forms.
  • Add the Simply Add CBD™ Baking Oil. Stir until combined and fully incorporated.
    Important: Mix thoroughly at this step for a few extra minutes to ensure the Simply Add CBD™ Baking Oil is dispersed throughout the mixture. This will ensure each slice of CBD gingerbread cream pie has an even dosage of CBD.
  • Add the molasses, melted white chocolate and dissolved gelatin.
  • Stir everything together and transfer this filling into the cooled pie crust.
  • Let the whole mixture set in fridge for about 3-4 hours.

For the Topping Decoration

  • Whip the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks forms and pipe dollops of cream spread evenly using a pastry bag.
  • Top it off sprinkle some ground nutmeg on top of the pie.

Notes

For a little more flavor and color in the pie, you can add ½ cup dolce de leche into the pie filling.
When changing the recipe to make more or less servings, make sure to calculate your Simply Add CBD™ Baking Oil requirements accordingly to reach your desired dosage of CBD. This is also true if you decide to cut larger sized slices of CBD gingerbread cream pie, but less total quantity with this exact recipe - your CBD dosage per slice will increase.
